Almond Cookies

Ingredients:Pennsylvania Dutch Cooking from AlansKitchen.com

  • 1 - cup butter

  • 1 - cup confectioners' sugar

  • 4 - egg yolks

  • 3 - Tablespoons cream

  • 3 - cups sifted flour

  • Icing

    • 2 - egg yolks

    • 2 - Tablespoon water

    •    - Confectioners' sugar, to thicken

    • 2 - cups almonds, blanched and finely chopped

Directions:

Preheat oven to 350 F. Grease cookie sheet.

  1. Cream butter and sugar, add eggs and cream. Stir.   Sift in flour and mix. 

  2. Scatter confectioners' sugar and flour on board and roll dough very thin to almost 1/4-inch thickness.  Cut in diamond shapes with jagging iron.  Bake for about 15 minutes. Cool.  Beat egg yolks lightly and stir in water. 

  3. Work in enough sugar to make thick paste.  Ice cookies generously and sprinkle with almonds.  Return to oven for about 3 minutes "to dry."
