Brown Sugar Sand Tarts

Makes about 80 cookies

Ingredients:Pennsylvania Dutch Cooking from AlansKitchen.com

  • 2 - cups brown sugar

  • 1 - cup butter or shortening

  • 2 - egg yolks

  • 3 - cups flour, sifted

  • 1/4 - teaspoon salt

  • 1 - egg white (reserve the other)

  • Cinnamon and sugar

  • Raisins

Directions:

Preheat oven to 325 F.  Grease cookie sheets.

  1. Cream sugar and shortening, add egg yolks.  Sift in flour and salt, a little at a time, blending well. 

  2. Sprinkle board with powdered sugar; roll out dough, very thin.  Cut in squares.   Beat reserved egg white and with a brush, spread a little on each cookie.  Sprinkle with brown sugar and cinnamon, top with raisins. 

  3. Place on cookie sheet.  Bake for 10 to 15 minutes or beginning to brown.
