Chocolate Cookies II

Makes about 80 cookies

Ingredients:Pennsylvania Dutch Cooking from AlansKitchen.com

  • 2 - cups sugar
  • 1-1/2 - cups soft butter
  • 4 - eggs
  • 2 - ounces chocolate, grated
  • 1/2 - teaspoon soda, dissolved in 1 - Tablespoon vinegar
  • 2-1/2 - cups flour, sifted

Directions:

Preheat oven to 350 F.  Grease cookie sheets.

  1. Cream sugar and butter, add eggs and grated chocolate.  Stir well. 

  2. Add soda in vinegar and enough sifted flour to form a stiff dough, using more than 2-1/2 cups if needed.  Mix well, chill in refrigerator overnight, next day roll out on floured board, very thin. 

  3. Cut into rounds and place on cookie sheets.  Bake for about 10 minutes.
