Date Strips

Makes about 40 squares

Ingredients:Pennsylvania Dutch Cooking from AlansKitchen.com

  • 3 - eggs, lightly beaten
  • 1 - cup sugar
  • 3/4 - cup pastry flour
  • 1/2 - teaspoon salt
  • 1 - teaspoon baking powder
  • 1 - pound dates, chopped
  • 1 - cup walnut meats

Directions:

Preheat oven to 350 F.  Grease baking pan.

  1. Add sugar gradually to beaten eggs.  Sift in flour, salt, and baking powder and mix well. 

  2. Dredge dates and nuts lightly with flour, fold into batter.  Spread in pan, leaving space around edges for spreading.

  3. Bake for about 40 minutes.  Cool, cut in strips.
