Filled Cookies

Ingredients:Pennsylvania Dutch Cooking from AlansKitchen.com

  • 1 - cup raisins, chopped
  • 1/2 - cup sugar
  • 1/2 - cup water
  • 1 - tablespoon flour
  • 1/2 - cup walnuts, chopped
  1. Place these ingredients in a saucepan and cook together until thick and syrupy.
  2. Set aside to cool.
  • 1/2 - cup shortening
  • 1 - cup sugar
  • 1/2 - teaspoon salt
  • 1 - egg
  • 1/2 - cup cream
  • 1 - teaspoon vanilla
  • 3-1/2 - cups flour
  • 1 - teaspoon baking powder
  • 1 - teaspoon soda

Directions:

Preheat oven to 350 F.  Grease cookie sheets.

  1. Cream shortening, add sugar and salt, beaten egg, cream, and vanilla.  Sift flour with baking powder and soda and add to mixture. 

  2. Turn out and roll on floured board, very thin.  Cut in shapes with round cookie cutter. 

  3. On half the rounds spread filling that has cooled.  Top these cookies with the rest of the rounds, pressing top and bottom firmly together at edges. 

  4. Place on cookie sheets.  Bake for 15 to 20 minutes.
