Fruit Cookies

Ingredients:Pennsylvania Dutch Cooking from AlansKitchen.com

  • 2/3 - cup butter
  • 1 - cup sugar
  • 2 - eggs
  • 1 - teaspoon soda, dissolved in 1 tablespoon hot water
  • 2 - cups flour, sifted
  • 1 - cup English walnuts, chopped
  • 1 - cup raisins, chopped
  • 1 - teaspoon cloves
  • 1 - teaspoon cinnamon
  • 1/2 - teaspoon mace

Icing

  • 1 - cup sugar
  • 4 - Tablespoon water
  • 1 - egg white
  • 1/2 - teaspoon almond extract

Directions:

Preheat oven to 350 F.  Grease cookie sheets.

  1. Cream butter and sugar, stir in eggs, add soda dissolved in water and sifted flour. Mix.  Dredge nuts and fruit in a little flour, fold into batter, sift in spices. 

  2. Drop from a teaspoon on cookie sheet and well separated.  Bake for about 20 minutes. Cool.

  3. Boil water and sugar together until syrup threads from spoon.  Beat egg whites in cold bowl with wire whisk. 

  4. Add almond extract and beat in syrup gradually.  Drop a little of this on each cookie sheet.
