Lebkuchen I(Ginger Cakes)
- 1/2 - cup shortening
- 1 - cup brown sugar
- 2 - eggs
- 1 - cup molasses
- 1 - cup warm coffee
- 1 - teaspoon soda
- 4-1/2 - cups flour
- 2 - tablespoons cocoa
- 1 - teaspoon cinnamon
- 1 - teaspoon cloves
- 1 - teaspoon allspice
- 3/4 - teaspoon salt
- 1/4 - pound finely chopped citron
- 1/4 - pound shredded orange peel
- 1/4 - pound shredded lemon peel
- 1-1/2 - cups chopped nutmeats
Preheat oven to 350° F. Grease cookie
Cream shortening and sugar, add eggs
Add molasses, dissolve soda in hot coffee, and
Sift flour and cocoa with spices and a pinch of salt.
mixture, alternating with mixed fruit and nuts.
Spread batter on
cookie sheet to 1/2-inch thickness, allowing for spreading. Bake for 25 minutes. Cut into squares.
