Moravian Scotch Cookies

Directions:

Preheat oven to 325� F. Grease cookie sheet.

  1. In a mixer, cream butter and sugar, sift flour several times with salt. 

  2. Stir egg into mixture, sift in flour, add caraway seed. Stir well. 

  3. Roll out on floured board, very thin. Cut in diamonds with a jagging iron.

  4. Bake for about 15 minutes. 

  5. Cool, cover with frosting:

  6. Boil sugar water and until syrup threads. 

  7. Beat white of egg on cold platter with wire whisk. 

  8. Beat syrup gradually into egg. 

  9. When thick and smooth, spread quickly on cookies and sprinkle with pink sugar.
