Scotch Taffy Cakes

Ingredients:Pennsylvania Dutch Cooking from AlansKitchen.com

  • 2 - cups flour, sifted
  • 2 - cups brown sugar
  • 1/3 - cup melted lard
  • 3/4 - cup New Orleans molasses
  • 1/2 - teaspoon baking soda dissolved in water
    1/2 - coconut, grated

Directions:

Preheat oven to 350 F.  Grease cookie sheets.

  1. Sift flour several times, then sift with sugar.  Mix with melted lard. 

  2. Slightly warm molasses and add.  Dissolve soda in a little hot water and add. 

  3. Mix well, chill in refrigerator overnight.

  4. Next day add coconut, drop from teaspoon on cookie sheet about size of hickory nut and 3 inches apart.  Bake for about 15 minutes.
