Slapjacks

Ingredients:Pennsylvania Dutch Cooking from AlansKitchen.com

  • 3/4 - cup butter
  • 3 - cups brown sugar, loosely packed
  • 1/2 - tablespoon soda, dissolved in 1 - tablespoon warm water
  • 3 - cups sifted flour
  • 1 - cup molasses
  • 1/2 - coconut, grated
  • 1/2 - cup chopped nuts

Directions:

Preheat oven to 350 F.  Grease baking pan.

  1. Cream butter and sugar.  Add soda and water to molasses.

  2. Sift flour into bowl. Stir.  Add molasses and stir vigorously.

  3. Fold in coconut and nuts.  Let stand overnight in refrigerator.

  4. Next day, drop by teaspoonfuls on buttered sheet.  Bake for 10 to 15 minutes.
