Crumb Omelet

Makes 4 servings. Pennsylvania Dutch Cooking from AlansKitchen.com

Ingredients

  • 1 - cup milk
  • 1 - cup bread crumbs
  • 6 - eggs
  • 1/2 - teaspoon salt
  • 1/4 - teaspoon pepper
  • 1 - teaspoon parsley, chopped

Directions:

  1. In a saucepan, bring the milk to a boil.  In a bowl, place bread crumbs and pour the hot milk over them. 

  2. Let stand a few minutes while you break the eggs into another bowl.  Stir (do not beat) until well mixed. 

  3. Add milk and crumbs.  Season the egg-milk mixture with the salt and pepper.

  4. In a pan at low heat, add the butter and melt.  Pour in the mixture and slowly cook until eggs are golden brown. 

  5. Cut in squares and serve garnish with parsley.
