Eggs Poached in Milk

Makes 3 or 4 servings. Pennsylvania Dutch Cooking from AlansKitchen.com

Ingredients

Directions:

  1. In a saucepan at moderate heat, add water and milk and bring to a boil, add salt, and drop in butter. 

  2. Stir the water with a spoon to make an eddy and drop in the egg. This keeps the egg in shape. 

  3. Turn down the heat and simmer until eggs are cooked. 

  4. Serve Poached Eggs one by one, on butter toast. Pour some milk over the egg and sprinkle salt and pepper.
