Scrambled Eggs with Ham

Makes 3 or 4 servings. Pennsylvania Dutch Cooking from AlansKitchen.com

Ingredients

  • 2 - Tablespoon butter
  • 1/2 - pound ham, diced
  • 6 - eggs
  • 1/2 - teaspoon salt
  • 1/4 - teaspoon pepper

Directions

  1. In a skillet at moderate heat, melt butter.  Add the diced ham. 

  2. In a mixing bowl, add the eggs and beat.  Pour eggs over the ham. 

  3. Reduce heat to low and stir eggs and ham together.  Season the egg and ham mixture with the salt and pepper. 

  4. When the eggs are cooked, simmer without stirring until brown on the bottom.  Turn in one piece and brown the other side.
