Browned Oysters

Makes 8 servings. Pennsylvania Dutch Cooking from AlansKitchen.com

Ingredients:

  • 8 - bread rounds
  • 2 - cups oysters and liquor
  • 2 - Tablespoons butter
  • Pepper to taste
  • Salt to taste
  • Parsley, chopped

Directions:

  1. Fit the bread slices onto a greased muffin tins. 

  2. Moisten with teaspoons of oysters liquor and dot with butter. Place under broiler. 

  3. Partially brown, then remove from broiler. 

  4. Moisten and dot again.

  5. Fill with oysters, sprinkle with pepper, dot with butter on top. 

  6. Cover with foil. 

  7. Place in oven this time. 

  8. Steam at 375 for 7 to 8 minutes. 

  9. Sprinkle with salt and bake for 1 more minute. 

  10. Serve with chopped parsley.
