Crab Patties

Makes 8 servings.Pennsylvania Dutch Cooking from AlansKitchen.com

Ingredients:

  • 2 - cups crabmeat
  • 1 - Tablespoon parsley, chopped
  • 1/4 - teaspoon mace
  • 1 - teaspoon salt
  • 1/4 - teaspoon pepper
  • 1 - cup milk
  • 1 - Tablespoon butter
  • 2 - Tablespoons all-purpose flour
  • 2 - egg yolks, beaten
  • 2 - eggs, beaten
  • bread crumbs
  • vegetable oil

Direction:

  1. Into a mixing bowl, flake the crabmeat. 

  2. Add the parsley, mace, salt, and pepper.

  3. In a bowl, blend the butter and flour. 

  4. Into a saucepan, pour the milk warm the milk and add the blended butter and flour. 

  5. Stir until smooth and thickened. 

  6. Add beaten egg yolks and cook a minute. 

  7. Remove from stove and stir in the crabmeat mixture. 

  8. Cool and shape into patties. 

  9. Let stand until firm.

  10. In a small bowl, pour eggs. 

  11. Dip crab patties into eggs and then into bread crumbs. 

  12. Let stand.

  13. In a frying pan, add vegetable oil and bring to a high heat. 

  14. Fry the crab patties until golden brown. 

  15. Drain on paper towel and serve with tarter sauce.
