Oyster Pie

Makes 4 to 5 servingsPennsylvania Dutch Cooking from AlansKitchen.com

Ingredients:

Pie Crust

  1. Sift the salt and baking powder with flour, cut in the butter, handling lightly as ice water is added. Chill. 

  2. Roll out quickly on floured board, very thin. 

  3. Line a deep 7-inch pie pan with puff pastry.

Pie Filling

Directions:

Preheat oven 375 F.

  1. Pour the oysters onto the crust, filling up the measure with cream if there is not enough liquor with the oysters. 

  2. Dot with butter, sprinkle with salt and pepper. 

  3. Add the hard-boiled eggs. 

  4. Sprinkle lightly with the flour. 

  5. Roll out the top crust, score a cross in its center, place on the pie, seal and crimp edges. 

  6. Fold back corners of the cross at the center to pour in more liquid or cream if needed as the pie bakes. 

  7. Bake 30 minutes or until crust in nicely browned.
