- 1-1/2 - cups cornmeal
- 1-1/2 - cups water
- 1 - teaspoon salt
- 5 - cups boiling water
- 6 - slices mush
- 1 - egg yolk
- 2 - Tablespoons milk
- 1 - cup crumbs
- Maple syrup
Place boiling water in top of
double boiler, mix cornmeal, water, and salt and add the mixture
to boiling water little by little, stirring.
Cook over high heat for 3
minutes, cover, steam for 15 minutes longer.
Pour into greased bread pan,
cool. Cut into 3/4-inch slices.
Dip mush slices into mixture of
egg yolk and milk, then in crumbs.
Let stand a few minutes before
frying in butter or bacon fat in a hot pan.
Turn carefully, fry other side. Serve with real maple syrup.
