Mush and Creamed Beef Hexel

Makes 6 servings

IngredientsPennsylvania Dutch Cooking from AlansKitchen.com

  • 6 - slices mush
  • 1 - egg yolk
  • 2 - Tablespoons milk
  • 1 - cup crumbs
  • Butter or bacon fat for frying
  • 1-1/2 - cups milk
  • 2 - Tablespoons butter
  • 2 - Tablespoons sifted flour
  • 1 - cup shredded dried beef

Directions

  1. You want to slice the mush in 3/4-inch thickness, dip in egg yolk mixed with milk, then in crumbs. 

  2. Let stand a few minutes before frying.  Or, thin slices of plain mush may be fried, if preferred.

  3. Make a sauce of the butter, flour, and milk, add dried beef, and blend.  Pour over the fried mush and serve.
