Noodle and Prune Mummix

Makes 6 servings

IngredientsPennsylvania Dutch Cooking from AlansKitchen.com

  • 2 - cup stewed prunes
  • 1 - lemon, juice and grated rind
  • 4 - Tablespoons sugar
  • 4 - cups homemade noodles
  • Salted water
  • 1/4 - cup butter
  • 1 - cup crumbs
  • 2 - Tablespoons butter
  • Brown sugar

Directions

Preheat oven 375 F.

  1. In a medium saucepan, you want to cook the prunes with lemon juice and sugar in water to cover.  When cooked, chop and sprinkle with lemon rind. 

  2. Butter a casserole, mix prunes and noodles (that have been cooked in salted water with the 1/4 cup butter).

  3. Fill the casserole with the mixture, cover with crumbs, dot with butter, and sprinkle a little brown sugar over the top.  Bake for 20 to 30 minutes.
