Baked Short Ribs

Pennsylvania Dutch Cooking from AlansKitchen.comMakes 4 to 6 servings

Ingredients

  • 4 - pounds short ribs of beef
  • 4 - Tablespoons all-purpose flour
  • 1 - teaspoon salt
  • 1/2 - teaspoon pepper
  • 4 - Tablespoons vegetable oil
  • 2 - onions, chopped
  • 1/2 - cup parsley, chopped
  • 2 - Tablespoon brown sugar
  • 2 - Tablespoon vinegar
  • 1/2 - teaspoon dry mustard
  • 1/2 - cup chili sauce
  • 2 - teaspoons Worcestershire sauce
  • 1 - cup beef stock
  • 1/2 - cup water
  • 12 - tiny onions
  • 12 - baby carrots

Directions

Preheat oven 350 F.

1) In a small mixing bowl, mix the flour, salt, and pepper. 

2) Rub into the short ribs. 

3) In a skillet at moderate heat, pour vegetable oil and brown the ribs. 

4) Add into the browning ribs the onions and parsley. 

5) Remove most of the fat in the skillet. 

6) Then add the brown sugar, vinegar, dry mustard, chili sauce, Worcestershire sauce, beef stock and water. 

7) Cook on the stove until sauce comes to a boil.

8) Cover and place in oven for 1- hour and 30 minutes. 

9) Then add the tiny onions and baby carrots and continue to bake an additional 1-hour.
