Beef Liver and Onions
Pennsylvania Dutch Cooking from AlansKitchen.comMakes 6 servings

Ingredients

  • 1-1/2 - pounds beef liver

  • 2 - Tablespoons all-purpose flour

  • 1/2 - teaspoon salt

  • 1/4 - teaspoon pepper

  • 1/2 - cup bacon drippings

  • 4 - cups onions, sliced

Directions

  1. In a mixing bowl, mix the flour, salt, and pepper. 

  2. Dredge the beef livers.

  3. In a skillet at moderate heat, add 1/4- cup bacon drippings and quickly brown the liver on all sides. 

  4. Remove and keep warm.

  5. In the skillet at moderate heat, add 1/4-cup bacon and sauté the onions until golden brown. 

  6. Into the skillet with the sautéed onions, return the beef livers and cook for an additional 5 minutes and serve.
