Boiled Beef Tongue

Pennsylvania Dutch Cooking from AlansKitchen.comMakes 4 servings.

Ingredients

  • 1 - beef tongue

  • 2 - cups water

  • 2 - cups salt

  • 1 - small red pepper

  • 1 - onion, sliced

  • 3 - stalks celery

  • 1 - cup water

  • 1/2 - cup vinegar

  • 1/4 - cup sugar

  • 1/2 - teaspoon cloves

Direction

  1. Wash the tongue. 

  2. Place in pan and add water, salt, red pepper, onion, and celery. 

  3. Slowly boil in brine for 2-1/2 to 3 hours. 

  4. Add water if you need. 

  5. When the tongue is tender, take it out and remove skin and root. 

  6. Place in saucepan with 1 cup of water, vinegar, sugar, and cloves. 

  7. Simmer until the liquid has evaporated. 

  8. Service sliced hot or cold.
