Rolled Pot Roast
Authentic Pennsylvania Dutch Recipes from AlansKitchen.comMakes 6 servings

Ingredients

  • 1 - beefsteak (24 ounces), cut thin

  • 8 - slices bacon

  • 2 - large onions, diced

  • 1/2 - teaspoon salt

  • 1/4 - teaspoon pepper

  • 2 - Tablespoon all-purpose flour

  • 2 - Tablespoon vegetable oil

  • 2 - cup water, boiling

  • 1-1/2 - cup green bell peppers, chopped

  • 1/2 - cup celery, chopped

  • 1/2 - cup carrots, diced

  • 2 - teaspoon parsley, chopped

Directions

  1. Cut the steak in 5-inch squares. 

  2. Cover each piece with bacon and onion. 

  3. Sprinkle with salt and pepper. 

  4. Roll and tie each piece. 

  5. Lightly dredge in flour.

  6. In a large pot, heat to moderate heat and add the oil.

  7. Sear beef, turning and browning. 

  8. Reduce heat to low and add boiling water. 

  9. Add the peppers, celery, carrots, and parsley. 

  10. Simmer 1-1/2 hours or until the meat is tender and the vegetables well cooked down. 

  11. Remove the tolls, thicken the stock with a little flour to make gravy, and serve with Grumbera Knepp.
