Roast Lamb with Mint Sauce

Ingredients:Pennsylvania Dutch Cooking from AlansKitchen.com

Mint sauce

Directions:

Preheat oven 350 F.

  1. Dredge the lamb with flour.  Place in skillet at moderate heat and add oil. 

  2. Quickly sear the lamb, browning on all sides.  Place in roasting pan with add water. 

  3. Put into the oven and roast for 3 hours.  Because the lamb needs fat, during the roasting, baste with butter. 

  4. In the last 30 minutes of cooking, sprinkle the lamb with salt and pepper.  Serve with mint sauce.

  5. To make the mint sauce, in a bowl, mix the mint with the vinegar.  Add the brown sugar and water to a saucepan and boil to make syrup. 

  6. Then add the syrup to the mint and vinegar.
