Dumplings

2 - eggs
1 - cup all-purpose flour
1/2 - teaspoon salt

Filling

1-1/2 - cups mashed potatoes
1 - egg, beaten
2 - onions, chopped
1 - Tablespoon parsley, minced
1/2 - teaspoon salt
1/4 - teaspoon pepper

2 - slices ham

Directions

  1. In a mixing bowl, beat the 2 eggs and add in as much flour as they will take, adding salt. 

  2. On a floured board, roll out dough, very thin abut 1/4-inch thickness.  Let set about 15 minutes to dry.  Cut into large circles. 

  3. In a mixing bowl, cone the mashed potatoes, 1 egg, onions, parsley, salt, and pepper.  Place a heaping tablespoon of the mashed potato mixture on each round dough. 

  4. Fold dough over, wet the edges, and pinch together.  Drop into boiling, salted water and simmer gently, uncovered, for 12 minutes. 

  5. In a skillet, fry the ham and place on platter.  Surround ham with the dumplings.
