Directions

  • In stock pot, boil the pork in water with salt and pepper.
  • Cook 3 hours or until meat comes from the bone.
  • Remove meat and strain liquid. You need 4 cups.
  • Shred the pork and return to the pot.
  • Add in the summer savory, thyme, salt, and pepper.
  • To prevent the cornmeal from sticking, constantly stir as you gradually pour in to the liquid.
  • Simmer 15 minutes or until the ingredients have the consistency of mush.
  • Pour into pans and cool.
  • Slice and lightly fry.
