Roast Spareribs I

IngredientsPennsylvania Dutch Cooking from AlansKitchen.com

  • 3 - pounds spareribs
  • 2 - cups water
  • 1/2 - teaspoon water
  • 1/4 - teaspoon pepper
  • 2 - cups water

Dressing

  • 2-1/2 - cups bread crumbs
  • 2 - Tablespoons butter, melted

Directions

Preheat oven to 450 F.

  1. Trim rough edges of the spareribs, crack across the middle, rub with salt, and sprinkle with pepper. In a mixing bowl, combine the bread crumbs, butter, eggs, salt, pepper, sage or thyme, and parsley. 

  2. Fold over the spareribs and stuff with dressing.  Sew up tightly, place in roasting pan with water. 

  3. Baste often and turn once.  Roast the spareribs in oven for 1-hour or until meat browns.
