Sauerkraut with Dumplings

Makes 6 to 8 servings.

IngredientsPennsylvania Dutch Cooking from AlansKitchen.com

  • 3 - pounds pork shoulder
  • 2 - pints water
  • 3 - pounds sauerkraut
  • 1/2 - teaspoon pepper

Dumplings

  • 2 - eggs, beaten
  • 1/2 - cup all-purpose flour, sifted
  • 1/4 - cup milk
  • 1/2 - teaspoon salt

Directions

  1. In a stockpot at moderate heat, add the pork shoulder and cover with water.  Boil the pork for 2 hours and 30 minutes or until tender. 

  2. Add the sauerkraut and pepper.  Cook 30 minutes longer.

  3. In a mixing bowl, combine the eggs, flour, milk, and salt to make the dumplings.  With a tablespoon, drop batter into bubbling pork and sauerkraut. 

  4. Cover tightly and cook 10 minutes.  These are not light dumplings, but the kind that blend with the sauerkraut, absorbing the flavor.
