2 - pounds veal steak
2 - eggs, beaten
1/2 - cup milk
1/2 - teaspoon salt
1/4 - teaspoon pepper
1 - cup bread crumbs
1/4 - cup bacon drippings
1/2 - lemon
2 - teaspoons parsley, chopped

  • Cut the veal into serving size pieces about (8-oz. each). 
  • In a mixing bowl, combine the eggs, milk, salt, and pepper. 
  • Dip the veal pieces into the batter, then coat in the bread crumbs.
  • In the frying pan at moderate heat, heat bacon drippings and add the veal. 
  • Quickly brown the veal and turn down the heat to low. 
  • Cover and simmer for 10 minutes. 
  • Then uncover pan and turn veal. 
  • Cover and simmer for 10 minutes. 
  • Then sprinkle with lemon juice and parsley, and serve.
