Cottage Pudding
Makes 6 to 8 servings.

1/2 - cup butter
1 - cup sugar
1 - cup milk
2 - cups flour, sifted
1 - heaping teaspoon baking powder
1 - cup raisins or figs, chopped

Sauce
1 - cup sugar
2 - tablespoons butter
2 - cup boiling water
1 - Tablespoon flour with
1 - Tablespoon cold water
1 - teaspoon vanilla

Preheat oven 350� F. Grease bread pan.

  • Mix creamed butter and sugar with milk and flour, sifted with baking powder. 
  • Dredge fruit with a little flour and fold in.
  • Bake for about 30 minutes.
  • For the sauce, cream sugar and butter, add mixed flour and water, and stir together. 
  • Stir mixture into the boiling water and simmer over low heat until sauce clears. 
  • Add vanilla.
