Fig Custard Pudding
Makes 6 servings

3 - eggs
1/2 - cup sugar
1/4 - teaspoon salt
1/2 - teaspoon vanilla
2 - cups milk
1 - cup dried figs, boiled and split
1 or 2 - lemon slices
2 - tablespoons bread crumbs
1/2 - cup shredded, blanched almonds

  • Beat eggs lightly, add sugar, salt, and vanilla. 
  • Scald milk and stir in the mixture. 
  • Place in top of double boiler over boiling water, and stir until mixture coats the spoon. 
  • Cook figs in water until they are soft (with lemon slices), line a pudding mold with them. 
  • Stir bread crumbs and shredded almonds into the custard and pour it over the figs. 
  • Chill, remove from mold, and serve with whipped cream.
