Fig Custard Pudding
Makes 6 servings
3 - eggs1/2 - cup
1/4 - teaspoon salt
1/2 - teaspoon vanilla
2 - cups milk
1 - cup dried figs, boiled and split
1 or 2 - lemon slices
2 - tablespoons bread crumbs
1/2 - cup shredded, blanched
- Beat eggs lightly, add sugar, salt,
- Scald milk and stir in the mixture.
- Place in top of
double boiler over boiling water, and stir until mixture coats
- Cook figs in water until they are soft (with lemon
slices), line a pudding mold with them.
- Stir bread crumbs and
shredded almonds into the custard and pour it over the figs.
Chill, remove from mold, and serve with whipped cream.
