Huckleberry Pudding with Lemon Sauce
Makes 6 servings

1 - heaping tablespoon butter
1 - cup sugar
3-1/2 - cups flour
1 - teaspoon baking soda
2 - cups sour milk
Pinch of salt
1-1/2 - cups huckleberries

Preheat oven 350� F. Butter shallow pan.

  • Cream butter and sugar, sift flour and baking soda into a mixing bowl. 
  • Add sour milk and salt. 
  • Mix. 
  • Dredge huckleberries in a little flour and fold into batter. 
  • Bake for about 30 minutes.

Lemon Sauce

1 - Tablespoon cornstarch
1 - egg
1 - Tablespoon butter
1/2 - cup sugar
2 - cups boiling water
1 - lemon, juice and grated rind

  • Place cornstarch, egg, butter, and sugar in a bowl and beat well. 
  • Pour boiling water over them. 
  • Mix. 
  • Transfer to top of double boiler, over boiling water, and stir until mixture thickens. 
  • Remove, add lemon juice and grated rind.
