Lemon Custard
Makes 6 servings.

3 - eggs
2 - cups milk
2 - Tablespoon flour
1 - lemon, juice and grated rind
1 - cup sugar

Preheat oven 350� F. Butter pudding dishes.

  • Separate the eggs and beat the yolks lightly. 
  • Bring milk to a boil, turn down heat, simmer. 
  • Moisten flour with a little cold milk and add to hot milk in saucepan with lemon juice and sugar. 
  • Stir and mix well until custard thickens. 
  • Then stir in the egg yolks. 
  • Remove from stove, fold in stiffly beaten egg whites, pour into butter pudding dish.
  • Bake for about 40 minutes.
