Peach Custard

2 - cups milk
1/2 - cup sugar
1/4 - teaspoon salt
1 - lemon, juice and grated rind
3 - egg yolks
1 - cup ripe peaches, halved

  • Place milk, sugar, salt, lemon juice, and egg yolks together in top of double boiler and cook slowly, stirring over boiling water.
  • When thick and creamy, fold in grated lemon rind and set aside to cool.
  • Line a mold with peeled peach halves, pour custard over the fruit when partly cooled, and place in refrigerator.
  • To serve turn out of mold and top with whipped cream to which a very little almond extract has been added.
