Red Raspberry Pudding

3 - cups raspberries
2 - cups sugar plus 2 tablespoon
2 - Tablespoon butter
1 - cup flour plus 2 tablespoon
1-1/2 - teaspoon baking powder
1/2 - teaspoon salt
5 - Tablespoon butter
1/3 - cup milk
1 - egg
Whipped cream

Preheat oven 350 F. Butter & flour square, shallow cake pan, 9 x 9 x 2.

  • Dredge the berries in the extra 2 tablespoons of flour and place in the pan. 
  • Spread the extra sugar over them. 
  • Dot with the 2 tablespoons butter.
  • Cream butter and sugar, mix with egg. 
  • Sift in flour, baking powder, and salt. 
  • Stir in milk. 
  • Beat well. 
  • Drop batter from spoon onto the fruit-do not pour it in.
  • Bake at for about 30 minutes. 
  • Serve warm with whipped cream and a few whole berries on top.
