Chocolate Pie

Pennsylvania Dutch Cooking from AlansKitchen.comMakes 1 ( 9-inch) pie

Prep Time: 25 min
Baking Time: 15 min

Ingredients:

  • 1/2  recipe Rich Pastry

  • 2     squares chocolate

  • 1/2  cup sugar

  • 1/4  cup cornstarch and flour, mixed

  • 3     eggs

  • 2     cups milk

  • 1     teaspoon vanilla

  •        Pinch of salt

  • 2     Tablespoons confectioners sugar

Directions:

Preheat oven to 300 F.

  1. Use half the recipe for Rich Pastry Line pie tin with pastry and bake shell until lightly browned.  In a saucepan, add and melt chocolate, mix with sifted sugar, cornstarch, and flour.  Beat egg yolks and add with milk. 

  2. Place mixture in top of double boiler over boiling water, cook until smooth and thick.  Cool.  Add vanilla.  Fill baked shell with custard. 

  3. Beat egg whites stiffly with salt.  Add confectioners' sugar.  Spread lightly over pie and bake for 15 minutes until meringue is lightly browned.
