Citronenkuchen (Lemon Tarts)

Pennsylvania Dutch Cooking from AlansKitchen.comMakes 20 tarts

Ingredients:

  •        Rich Pastry

  • 1/2  stick butter

  • 1     cup brown sugar

  • 6     egg yolks

  • 1     lemon, juice and grated rind

  •        Pinch of salt

Directions:

Preheat oven to 350 F.

  1. Use recipe for Rich Pastry.  Roll out lightly and cut in rounds on floured board with coffee cup. 

  2. Line muffin tins with pastry.  Mix filling by creaming butter and sugar, blending with beaten egg yolks, adding lemon juice, grated rind, and salt. 

  3. Drop in heaping teaspoonfuls into patty shells.  Bake about 30 minutes, until filling is firm and crust golden brown.
