Crumb Pie

This is another of pies that is eaten for breakfast!

Pennsylvania Dutch Cooking from AlansKitchen.comMakes 2 (7-inch pies)

Ingredients:

  •            Rich Pastry
  • 2         cups flour, sifted
  • 2         heaping teaspoon baking powder
  • 1-1/2   cups light brown sugar
  • 3/4      teaspoon salt
  • 1/3      cup lard and butter
  • 2         eggs
  • 3/4      cup milk
  •            Vanilla or grated orange rind

Directions:

Preheat oven to 350 F.

  1. Line 2 pie tins with pastry, using recipe for Rich Pastry.   Sift flour, baking powder, and sugar into a bowl, add salt, and butter and lard mix. 

  2. Mix well together until crumbly.  Reserve 1 cup of the crumbs.  To the rest, add egg yolks, milk, and flavoring. Beat the whites stiffly and add. 

  3. Pour into unbaked shells and sprinkle the 1 cup crumbs thickly over the tops of the pies.  Bake in 350 F. oven for about 45 minutes.
