Ebbelkuche (Apple Tart)

Pennsylvania Dutch Cooking from AlansKitchen.comMakes 1 (9-inch) tart

Prep Time: 15 min
Baking Time: 10 min + 40 min

  •           Rich Pastry
  • 1        Tablespoon flour
  • 2        Tablespoons sugar
  • 1-1/2  Tablespoons butter
  • 2        cups apples, cored and halved
  • 3        Tablespoons brown sugar
  • 1/2     teaspoon salt
  • 1/2     teaspoon cinnamon
  • 1/8     teaspoon nutmeg
  • 1/8     teaspoon cloves
  • 1        Tablespoon ice water

Preheat oven to 450� F.

  1. Line a deep pie dish with Rich Pastry
  2. Sift the flour and sugar over the bottom of the pie and dot with butter.
  3. Fill shell with apple halves. 
  4. Put a little butter in each half-apple and sprinkle with brown sugar, salt, and spices. 
  5. Add water (and a little lemon juice, if desired). 
  6. Crisscross the top of the pie with strips of pastry.
  7. Bake for 10 minutes. 
  8. Reduce heat and bake at 350� for about 40 minutes longer, when crust is lightly browned and apples soft.
