Huckleberry Meringue Pie

Pennsylvania Dutch Cooking from AlansKitchen.com Makes 1 (8-inch) pie.

Ingredients:

 

  • 3 - cups huckleberries
  • 2 - egg yolks
  • 1 - cup sugar
  • 2 - egg whites
  • 2 - Tablespoons sugar
  • 2 - Tablespoons flour
  • 1/8 - teaspoon salt
  • 1 - Tablespoon butter
  • 3 - Tablespoons orange juice
  • 1 - teaspoon lemon juice
  • Meringue
    • 2 - egg whites
    • 2 - Tablespoons sugar
    • Pinch of salt
    • 1/2 - teaspoon flavoring

Directions:

Preheat oven to 350� F.

  1. Mix pastry, roll into ball, and chill. 
  2. Roll out, line pie dish, double back the rim and crimp, bake until lightly browned.
  3. Wash and drain berries. 
  4. Beat egg yolks, mix with sugar, flour, and salt, add berries and stir together. 
  5. Place in saucepan over low heat, stirring, and bring slowly to a boil. 
  6. Turn down heat and simmer 3 minutes. 
  7. Take off stove, stir in butter, orange and lemon juice. 
  8. Pour into baked pie shell.
  9. Beat egg whites until almost stiff, sprinkle in the sugar and salt, stir in vanilla or whatever flavoring you prefer, beat until stiff. 
  10. Spread meringue over filling. 
  11. Brown lightly in 325� F. oven for about 15 minutes.
