Lemon Sponge Pie

Directions

Preheat oven to 350 F.

  1. Using recipe for Rich Pastry, take half the proportions and roll out one crust.  Line a pie tin and bake the shell until crust begins to brown.  Remove.

  2. Beat egg yolks lightly, cream sugar and butter, combine.  Add sifted flour, lemon juice, and milk. 

  3. Beat egg whites stiffly and add with grated lemon rind.  Pour mixture into pie shell and finish baking at 400 F., until filling is firm and meringue nicely browned.
