Raspberry Pie

Makes 1 (deep 8-inch) Pie.Pennsylvania Dutch Cooking from AlansKitchen.com

Ingredients

  • Rich Pastry
  • 4 - cups red raspberries
  • 3/4 - cup sugar, reserving 2 tablespoon
  • 1 - teaspoon cornstarch
  • 1 - cup milk
  • 2 - egg whites
  • Pinch of salt

Directions

Preheat oven to 350 F.

  1. Line a deep pie dish with Rich Pastry.  Pour in raspberries, cover with sugar, saving 2 tablespoons.

  2. Cook cornstarch, milk, and 2 tablespoons sugar together, stirring constantly until mixture thickens.  Cool. 

  3. Beat egg whites stiffly, with salt, pour over raspberries.  Roll out top crust, cut air holes, place on pie, crimping and sealing edges. 

  4. Brush crust with butter and sift a little powdered sugar over top.  Bake for about 40 minutes until crust is nicely browned.
