Rhubarb Pie

Makes 1 (8-inch) Pie.Pennsylvania Dutch Cooking from AlansKitchen.com

Ingredients

  • Rich Pastry
  • 1 - heaping tablespoon butter
  • 1/2 - cup flour
  • 1 - cup sugar
  • 3 - cups rhubarb
  • Pinch of salt

Directions

Preheat oven to 450 F.

  1. Roll out Rich Pastry into 2 crusts.  Line a pie dish with pastry and dot with butter. 

  2. Mix flour and sugar and sprinkle some of it over crust.  Skin the rhubarb, cut in 1/2-inch pieces, and measure 3 cups. 

  3. Mix rhubarb with remaining flour and sugar and pour into pie shell.  Dot with butter.

  4. Put vents in top crust and seal on the pie, crimping edges.  Bake for 10 minutes and in 350 oven 25 to 30 minutes longer, when crust should be golden brown.
