Chicken Pot Pie Squares

Pennsylvania Dutch Cooking from AlansKitchen.comMakes 8 to 10 servings:

Prep Time: 20 min
Cooking Time: 1 hr + 30 min

Ingredient:

  •    2  quarts water
  •    1  chicken (3-1/2 to 4 pounds)
  •    1  cup celery, chopped
  •        Pinch saffron
  •        Salt and pepper (to taste)
  • Pot Pie Squares Dough
    •    5  eggs
    • 1/2  cup water
    • 2-3/4 - 3-1/4 cups flour

Directions:

  1. In 2 quarts of water, cook chicken, celery, saffron, salt and pepper until chicken is tender.

  2. Remove meat from bones. Set aside.

  3. Add water to broth to make 3-1/2 quarts. (Add several chicken bouillon cubes to strengthen the broth if needed.)

  4. Bring broth to a boil.

Dough

  1. In a bowl, combine eggs and water and beat well.

  2. Gradually add flour until soft dough is formed.

  3. Cut into 3 parts. Roll each part on a cloth, rolling as thin as possible, using an additional 1-cup of flour to flour cloth and dough so it handles well.

  4. Cut into -inch squares with pastry wheel.

Pot Pie Squares

  1. Drop potpie square into boiling broth and cook until tender.

  2. Return chicken to broth.

  3. Serve piping hot.
