Chicken With Dumplings

Pennsylvania Dutch Cooking from AlansKitchen.comMakes 4 servings

Ingredients:

  • 1 - stewing chicken

  • 2 - small onions

  • 2 - pints water

  • 1/2 - teaspoon salt

  • 1/4 - teaspoon pepper

  • 1 - Tablespoon all-purpose flour

  • Dumplings

    • 1 - egg

    • 3 - Tablespoons milk

    • 2/3 - cup all-purpose flour

    • 1/4 - teaspoon salt

    • 1 - teaspoon baking powder

Directions:

  1. Wash the chicken, cut up and place in water in stockpot at moderate heat. 

  2. Add onions, and cook for 2-hours and 30 minutes or until chicken is tender. 

  3. Add the salt and pepper. 

  4. Thicken the broth with flour pressed through a sieve.

  5. To make the dumplings, beat egg until light, add milk, and stir. 

  6. Sift the flour, salt, and baking powder. 

  7. Mix with eggs and milk to form a heavy batter. 

  8. Using a teaspoon, drop dough into the rapidly boil stew. 

  9. Turn heat down to low. 

  10. Cover tightly and simmer for 15 minutes.
