Fried Chicken I

Pennsylvania Dutch Cooking from AlansKitchen.comMakes 4 servings

Ingredients

  • 2 - whole spring chickens, halved

  • 1/2 - teaspoon salt

  • 1 - egg, beaten

  • 1/4 - cup cream

  • 1/4 - cup all-purpose flour

  • 1/2 - teaspoon salt

  • 1 - cup bread crumbs

  • 1/4 - cup vegetable oil

  • 1/2 - teaspoon parsley

  • Directions

    1. Rub the chicken with salt. 

    2. In a mixing bowl, mix egg and cream. 

    3. In another bowl, mix the flour, salt, and bread crumbs. 

    4. Dip the chicken quarters in egg mixture and coat. 

    5. Dredge the chicken in the flour mixture.

    6. In a skillet at moderate heat, add the oil. 

    7. When oil is hot, fry the chicken 20 minutes or until light golden brown. 

    8. Place chicken on paper towel to absorb any oil. Pour off most of the oil and fat. 

    9. Return chicken to skillet. 

    10. Cover tightly, cook over low heat, and cook 30 minutes or until chicken is tender. 

    11. Drain and serve. 

    12. Garnish with parsley.
