Stewed Chicken

Pennsylvania Dutch Cooking from AlansKitchen.comMakes 4 servings

Prep Time: 15 min
Cooking Time: 2 hrs 30 min

Ingredients:

  •       1  stewing chicken

  •       2  pints water

  •       2  small onions

  •       2  stalks celery

  •       3  slices lemon

  •    1/2  teaspoon salt

  •    1/4  teaspoon pepper

  • 1-1/2  Tablespoon all-purpose flour

Directions:

  1. Wash the chicken, cut up and place in water in stockpot at moderate heat. 

  2. Add the onions, celery, and lemon. 

  3. Simmer 2-hours and 30 minutes or until tender.

  4. Season the chicken with the salt and pepper. 

  5. Thicken the broth with flour rubbed through a sieve. 

  6. Serve with waffles or biscuits.
