Prune Stuffing

  • 3 - cups bread, diced
  • 1/2 - cup butter, melted
  • 1 - cup dried prunes
  • 1 - cup water, cold
  • 2 - Tablespoons lemon juice
  • 1 - Tablespoon brown sugar
  • 1/2 - teaspoon salt
  • 1/2 - cup blanched almonds

Directions

  1. In a large mixing bowl, mix the bread and butter.  In a saucepan at moderate heat, place the prunes with the water, lemon juice, and brown sugar. 

  2. Bring to a boil and cook 5 minutes.  Reserve the prune water and mix with bread mixture. 

  3. Check for pits, chop prunes, and sprinkle with salt.  Blanch the almonds and chop. 

  4. Mix prunes and almonds in to the bread mixture.
