Cream of Tomato Soup

Makes 4 servingsPennsylvania Dutch Cooking from AlansKitchen.com

Ingredients

  • 1/4 - cup butter
  • 3 - Tablespoons flour
  • 4 - cups milk
  • 2 - cups tomatoes, chopped
  • 1/2 - teaspoon pepper
  • 1/2 - teaspoon parsley, minced

Directions

  1. In a saucepan at moderate heat, melt butter. 

  2. Add flour and blend into a smooth paste. 

  3. Heat the milk in a separate pan using a low to moderate heat. 

  4. Carefully add into the butter-flour mixture (roux). 

  5. Reduce to low heat and simmer 10 minutes.

  6. With a double boiler on low heat, strain the milk mixture (or puree with an hand-blender) and add sugar to the mixture. 

  7. Simmer for 10 minutes. Just before serving, add the salt and pepper. 

  8. Garnish soup with parsley.
