Rivvel Supp

Makes 4 servingsPennsylvania Dutch Cooking from AlansKitchen.com

Rivvel in Pennsylvania German means flakes or lumps.

Ingredients

  • 4 - cups milk
  • 2 - eggs
  • 2 - heaping tablespoons flour
  • 1/2 - teaspoon salt
  • 1/8 - teaspoon pepper

Directions

  1. In a stockpot, pour in milk and heat at moderate heat for 10 minutes. 

  2. Beat the eggs and cut into the flour with a knife until the mixture flakes. 

  3. You form Rivvels by rubbing the mixture through the hands, letting it fall into the soup in flakes.
  4. Turn the heat down to low and simmer for a 3 minutes or the flour blends with the milk. 

  5. Add the salt and pepper. 

  6. Pour into bowls and garnish with parsley.
